We’ve harvested some beautiful (and mammoth!) eggplants from our garden recently. Earlier this week I made an Eggplant Parmesan with San Marzano Tomato Sauce. Next I want to try a Moroccan Eggplant Salad with Cumin. Eggplants are high in fiber and antioxidants, and studies have shown that they can lower cholesterol.
This pizza recipe comes from Gourmet. Broiling the eggplant slices and brushing them with garlic-infused oil imparts great flavor, without the heaviness of frying.
We got the pizza dough from Whole Foods, and added a thin layer of vodka sauce before layering the eggplant.
